Healthy(ish) Rice Krispies

I’m not a big sweets person, I’d rather have something salty any day, but sometimes I get a craving for something just a little sweet. These peanut butter and dark chocolate rice krispie treats are the perfect snack sized treat for when my sweet tooth needs a fix. Super easy to make too!

  • 2 1/2 – 3 cups of rice krispies
  • 1 cup natural peanut butter (or any flavor nut butter)
  • 1/2 cup honey
  • 3/4 cup of dark chocolate (or more if you prefer)
  • 1/2 tsp vanilla extract
  • 1 tsp coconut oil

Mix peanut butter, honey and vanilla extract together (can melt together if easier to mix). Add in rice krispies. Spread out in a lined or buttered 8×8 square baking pan and press firm. Melt the dark chocolate and coconut oil together. Spread over rice krispie mixture. Freeze for at least 15 minutes, or until chocolate is frozen. You can cut these into squares and serve cold (my personal preference), or at room temperature.

*Can replace honey with pure maple syrup, however, syrup tends to be too sweet in my opinion.
